This made me realize that when life gets overwhelming, I often do retreat to the world of domestic tranquility and make something yummy to eat. Usually a cake. But not a cake from a mix. That just seems to reinforce the idea that life, and cake baking, is something to rush through. It's not. Time to slow down and smell the roses. Or the cake in this case.
So - here's my tip of the day.
Bake a cake.
Not a complicated one. Something summery, fresh & easy.
But leave the mixes on the shelf. They have their place, but feeding your soul is not it.
Here's one of my favorite recipes. Even if you don't bake, you can make this cake. It's that easy.
Berry Cornmeal Cake
- Set oven to 375 degrees.
- In a large bowl, whisk together 1 1/4 cups flour, (I especially love Trader Joe's White Whole Wheat Flour - all the benefits of whole wheat, but tastes & acts like white, click here to find out more), 1/2 cup cornmeal, 2 tsps. baking powder, 1 tsp salt and 1 cup plus 2 tbs. sugar.
- In another bowl, whisk together 1/2 cup buttermilk (or just mix regular milk & 1 tbs. vinegar, zap for a few seconds, it will work just as well), 2 eggs and 7 tbs. melted butter.
- Pour the eggs mixture over the flour mixture, whisk together.
- Put 1 tbs. butter in a 10 in oven safe skillet or pan, put it into the hot oven to melt.
- Remove the skillet/pan from the oven, swirl butter around the bottom.
- Pour the batter into the skillet.
- Sprinkle fresh fruit on top - whatever you have on hand ...berries, peaches, pears - whatever. Cut it into small pieces if necessary.
- Sprinkle 1/4 cup sugar on top.
- Bake your creation until the top is browned - 45 - 50 minutes, but put a pan underneath to catch any drips.
- Sit back, enjoy the smell and your sense of accomplishment!
- When it's cool, EAT SOME!

Berry Cornmeal Cake sounds Yummy!
I made it again last night using frozen blueberries. Turned out great!
